Bacon Wrapped Meatloaf

Meatloaf wrapped in bacon!

Ingredients

  • 1 rib celery
  • 2 TBS butter
  • 2 sliced bacon, diced & 7 slices whole
  • 1/2 yellow onion
  • 1 carrot, cubed
  • 1 bell pepper, chopped
  • 4 button mushrooms
  • 3 cloves garlic
  • 1/4 tsp dried rosemary
  • 2 cups breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 2 tsp kosher salt
  • 1 tsp worcestershire sauce
  • 1 tsp black pepper
  • 2 lbs ground beef

For Glaze

  • 2 TBS rice vinegar
  • 2 TBS brown sugar
  • 1 TBS dijon mustard

Instructions

  1. Preheat oven to 350
  2. melt butter in saucepan then add diced bacon and cook until crispy
  3. while bacon cooks, add veggies to food processor and blend until no large chunks remain
  4. add veggie mixture to saucepan and cook
  5. remove mixture and palce into bowl. Add seasoning and any remaining ingredients (except bacon strips)
  6. Lay 7 strips of bacon overlapping down on the table. Mound veggie mix over bacon. Wrap mix with bacon ends and flip onto baking pan.
  7. Top meatloaf with glaze
  8. bake for one hour
