Bacon Wrapped Meatloaf
Meatloaf wrapped in bacon!
Ingredients
- 1 rib celery
- 2 TBS butter
- 2 sliced bacon, diced & 7 slices whole
- 1/2 yellow onion
- 1 carrot, cubed
- 1 bell pepper, chopped
- 4 button mushrooms
- 3 cloves garlic
- 1/4 tsp dried rosemary
- 2 cups breadcrumbs
- 1/4 cup milk
- 1 large egg
- 2 tsp kosher salt
- 1 tsp worcestershire sauce
- 1 tsp black pepper
- 2 lbs ground beef
For Glaze
- 2 TBS rice vinegar
- 2 TBS brown sugar
- 1 TBS dijon mustard
Instructions
- Preheat oven to 350
- melt butter in saucepan then add diced bacon and cook until crispy
- while bacon cooks, add veggies to food processor and blend until no large chunks remain
- add veggie mixture to saucepan and cook
- remove mixture and palce into bowl. Add seasoning and any remaining ingredients (except bacon strips)
- Lay 7 strips of bacon overlapping down on the table. Mound veggie mix over bacon. Wrap mix with bacon ends and flip onto baking pan.
- Top meatloaf with glaze
- bake for one hour
