Chocolate Bourbon Pecan Pie
A holiday favorite!
Ingredients
- 1 frozen pie crust
- 2 Cups Pecans
- 3 Large Eggs
- 3/4 Cup Dark Brown Sugar
- 2/3 Cup Light Corn Syrup
- 1 vanilla bean
- 2 TBS unsalted butter, melted
- 2 TBS bourbon
- 1/2 tsp kosher salt
- 3/4 Cup bittersweet chocolate chips
Instructions
- Preheat oven to 375
- Chop pecans into bite sized pieces. Put onto rimmed baking sheet. Put in oven for 8 minutes to toast.
- In a large bowl, combine eggs, brown sugar, corn syrup, melted butter, bourbon, and salt.
- Slice vanilla bean in half, lengthways. Using the edge of your knife, scrape vanilla paste out of vanilla bean. Add to bowl.
- Stir and combine contents of bowl.
- Stir in pecans and chocolate chips
- Pour filling into pie shell. Bake on bottom shelf for about 55 minutes.
