Chocolate Bourbon Pecan Pie

A holiday favorite!

Ingredients

  • 1 frozen pie crust
  • 2 Cups Pecans
  • 3 Large Eggs
  • 3/4 Cup Dark Brown Sugar
  • 2/3 Cup Light Corn Syrup
  • 1 vanilla bean
  • 2 TBS unsalted butter, melted
  • 2 TBS bourbon
  • 1/2 tsp kosher salt
  • 3/4 Cup bittersweet chocolate chips

Instructions

  1. Preheat oven to 375
  2. Chop pecans into bite sized pieces. Put onto rimmed baking sheet. Put in oven for 8 minutes to toast.
  3. In a large bowl, combine eggs, brown sugar, corn syrup, melted butter, bourbon, and salt.
  4. Slice vanilla bean in half, lengthways. Using the edge of your knife, scrape vanilla paste out of vanilla bean. Add to bowl.
  5. Stir and combine contents of bowl.
  6. Stir in pecans and chocolate chips
  7. Pour filling into pie shell. Bake on bottom shelf for about 55 minutes.
