Italian Red Sauce

A delicious red sauce simmered for hours to develop deep flavor.

Ingredients

  • 3 lb italian sausage (sweet)
  • 2 large onions
  • 8 cloves garlic, minced
  • 2 oz basil, chopped
  • 1 bunch parsley
  • 4 bay leaves
  • 1 bunch parsely, chopped
  • 1/2 cup extra virgin olive oil
  • 3 6oz can tomato paste
  • 2 cups chicken stock
  • 4 28oz cans plum tomatoes (san marzano) pureed in food processor

Instructions

  1. brown sausage in heavy bottom pot in olive oil
  2. remove and set aside
  3. add onion to pot and saute until lightly browned
  4. add garlic and herbs and saute one minute. add tomato paste and saute and additional minute.
  5. add stock and tomatoes, bring to a slow boil and then add sausage back in
  6. simmer for 1 to 2 hours. Remove bay leaves and thyme
