Italian Red Sauce
A delicious red sauce simmered for hours to develop deep flavor.
Ingredients
- 3 lb italian sausage (sweet)
- 2 large onions
- 8 cloves garlic, minced
- 2 oz basil, chopped
- 1 bunch parsley
- 4 bay leaves
- 1 bunch parsely, chopped
- 1/2 cup extra virgin olive oil
- 3 6oz can tomato paste
- 2 cups chicken stock
- 4 28oz cans plum tomatoes (san marzano) pureed in food processor
Instructions
- brown sausage in heavy bottom pot in olive oil
- remove and set aside
- add onion to pot and saute until lightly browned
- add garlic and herbs and saute one minute. add tomato paste and saute and additional minute.
- add stock and tomatoes, bring to a slow boil and then add sausage back in
- simmer for 1 to 2 hours. Remove bay leaves and thyme
